Dill honey, produced in the areas of Palermo, Agrigento and Trapani in the summer months stands out for its color amber when liquid, crystallizing tends to brown, smell quite aromatic, reminiscent of fennel and its flavor decisive, with a slightly bitter aftertaste rich in mineral salts.  decisive, pleasant and rich in mineral salts.
Further information:
Uses: excellent paired with fresh, unripened cheeses, for example with ricotta or first salts.
Crystallization: in some years it crystallizes with difficulty, however fine crystals.
