Sicilian durum wheat semolina pasta, bronze drawn with long drying at low temperature. The semolina we use is obtained from the set of three varieties of wheat (Duilio, Iride and Simeto) grown exclusively on the Sicilian territory.
Casarecce are a typically Sicilian pasta shape and probably derive their origin from the “busiata pasta” of Arab origin obtained with the “bus”, the thin barrel of a plant with which once the pieces of dough were wrapped. Their smooth and delicately porous surface offers an ideal support for any sauce, from traditional to simpler ones. (read on our blog "A good story, like pasta" )
