Collection: Artisan Pasta

Pasta of Sicilian durum wheat semolina from Forno Santa Rita produced with very high quality flour.
The pasta making process is totally crafts: the flour is mixed with the water inside the mixer, passes through the bronze dies and is manually placed in the frames.
L'drying (at a low temperature it does not "burn" the pasta, which will keep its nutritional properties intact) takes place at a temperature between 38 and 40 degrees (depending on the type of shape) for at least 30 hours. 
After the drying time has elapsed, it is packaged manually, labeled and ready to be served on our tables.
